Pitalito is the first coffee municipality in Colombia it encompasses a wide area that has a lot to offer in terms of quality, varieties, and processes. This area traditionally has been a coffee-producing region and has maintained its great acceptance in the national and international market for the quality it presents. On the farms, the fieldwork is mostly carried out by family and neighbours. The cherries are picked at the optimum point of ripening. Fermentation is carried out in plastic tanks for 12 hours followed by pulping. A layer of sticky mucilage is left on the beans which are slowly sun-dried in solar parabolic dryers for 15 to 25 days. Part of the farm constitutes a reserve of 35 hectares of native forest. Only people of the local region work on the farm to ensure socio-economic sustainability. As of 2020, the farm is transitioning to organic process and certification.
